Berry Bean Blast

Most of us are constantly looking for new ways to get a good shot of protein into our diet, while keeping it easy and without sacrificing taste. Better yet – an option that is vegetarian/vegan and allows you to get your protein knocked out first thing in the morning!

Try this Berry Bean Blast Bean Smoothie for a great, healthy way to start your day.

 

Berry Bean Blast – Bean Smoothie Recipe

Makes 2 servings

Ingredients

  • 1 15-ounce can, rinsed and drained, or 1 3/4 cups cooked dry-packaged navy beans or Great Northern beans
  • 1 1/2 cups orange juice
  • 2 cups quartered strawberries
  • 1 to 3 tablespoons honey
  • 1 1/2 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 6 to 8 ice cubes

Preparation

  1. In a blender or food processor process all ingredients, except ice cubes. Add ice cubes and blend until smooth. Serve in glasses.

Note: May be made 1 to 2 days in advance. Cover and refrigerate. The drink will thicken in the refrigerator. Stir in orange juice or cold water for desired consistency. If frozen strawberries are used, omit the ice cubes.
